EGGS A LA TRINIDAD

6 eggs
2 lamb's kidneys
1 cupful of fresh bread crumbs
2 level tablespoonfuls of butter
2 level tablespoonfuls of flour
1/2 pint of stock
1 teaspoonful of kitchen bouquet
1/2 teaspoonful of salt
1 saltspoonful of pepper

cooking :

  1. Split the kidneys, cut out the tubes; scald them, drain, and cut them into thin slices.
  2. Put the butter into a saucepan, add the kidneys, toss until the kidneys are cooked, then add the flour, stock, kitchen bouquet, salt and pepper; stir until boiling.
  3. Grease a shallow granite or silver platter, break into it the eggs, sprinkle over the bread crumbs and stand them in the oven until the eggs are "set," then pour over the sauce, arrange the kidneys around the edge of the dish and send at once to the table.

EGGS A LA REINE

6 eggs
1/2 pint of chopped cold cooked chicken
1/2 can of mushrooms
2 tablespoonfuls of butter
2 tablespoonfuls of flour
1/2 pint of milk
1/2 teaspoonful of salt
1 saltspoonful of pepper

coking :

  1. Use ordinary shirring dishes for the eggs; butter them, break into each one egg, stand these in a pan of boiling water and in the oven until they are "set."
  2. Rub the butter and flour together, add the milk, stir until boiling, add the salt, pepper, hopped chicken and mushrooms, and put one tablespoonful of this on top of each egg and send at once to the table.
  3. This is also nice if you put a tablespoonful of the mixture in the bottom of the dish, break the egg into it, and then at serving time put another tablespoonful over the top.

BREAD PUDDING

2 c. milk, scalded
1/4 c. butter
2 eggs
1/2 c. sugar
1/4 tsp. salt
1 tsp. ground nutmeg
3 c. soft bread, torn into sm. pieces
1/2 c. raisins

cooking :

  1. Combine milk and butter, stirring until butter is melted.
  2. Cool to lukewarm.
  3. Combine eggs, sugar, salt and nutmeg; beat at medium speed of mixer for 1 minute.
  4. Slowly add milk mixture.
  5. Place bread in a lightly greased 1 1/2 quart casserole; sprinkle with raisins and pour batter over all.
  6. Bake at 350 degrees for 50 minutes or until set.
  7. Serve warm with Lemon Sauce.

SHORTCAKE

1/2 angel food cake, cut into cubes
1 pkg. vanilla pudding
1 c. milk
1 pt. vanilla ice cream
1 pkg. strawberry Jello
1 c. boiling water
1 pkg. frozen strawberries

cooking :

  1. Put angel food cake cubes in bottom of casserole dish.
  2. Pour vanilla pudding mixture over top.
  3. Pour strawberry mixture over top of vanilla mixture.
  4. Refrigerate and serve.

OATMEAL EASY COOKING RECIPES

3 c. sugar
1 1/2 c. lard
1 1/2 c. raisins
2 1/2 c. oatmeal
1/2 c. molasses (dark)
3 eggs, beaten
1 c. peanuts
1 c. sour milk
2 tbsp. soda
2 tbsp. baking powder
6 c. flour
1 tsp. each of nutmeg, cinnamon and salt

cooking :

  1. Grind raisins and peanuts.
  2. Sift together flour, baking powder, nutmeg, cinnamon, salt.
  3. Cut in lard, add sugar, oatmeal, raisins and peanuts and mix well again.
  4. Dissolve soda in sour milk and add molasses and beaten eggs.
  5. Chill one hour.
  6. Using your hand, roll the dough into balls the size of a walnut and press slightly flat.
  7. Beat two eggs and paint the top of the cookie with egg.
  8. Bake at 375 degrees until golden brown.

LEMON SPONGE

2 1/2 c. sifted cake flour
1 tsp. salt
2/3 c. shortening
1/3 c. cold water (approximately)
FILLING FOR ONE 9" UNCOOKED PIE SHELL:
2 tbsp. butter
1 c. sugar
3 eggs, separated
3 tbsp. flour
1/2 tsp. salt
Lemon juice & rind of 1 lemon
1 1/2 c. hot milk

cooking :

  1. Measure sifted flour, add salt and sift again.
  2. Cut in shortening using a pastry blender or two knifes.
  3. Sprinkle with water mixing lightly with fork.
  4. press into ball.
  5. Makes enough pastry for a 9 inch two crust pie or two shells.
  6. Cream butter; add sugar and egg yolks. Beat until light and fluffy. Stir in flour, salt, lemon juice, rind and hot milk.
  7. Fold in stiffly beaten egg whites.
  8. Bake in 400 degree oven for approximately 40 minutes.
  9. Serves 6 at 371 calories per serving.

MAPLE CREAM PIE

material :

1 can condensed milk
2/3 c. maple syrup
Pinch salt

--TOPPING:--

2 c. whipping cream
1/2 c. powdered sugar
2 tsp. vanilla
Pinch salt

cooking :

  1. Cook on low heat, very slow, stirring constantly until it bubbles in the middle.
  2. Pour into a baked pie shell.
  3. Chill for 1 hour.
  4. Whip ingredients until thick.
  5. Pour on top of pie filling and sprinkle with chopped pecans.
